Spring Recipes Lately
I’ve been focusing on high protein and sometimes it’s hard to find easy, realistic recipes for lunch and dinner, so I wanted to share a few of our favorite easy meals that we make just about every week :) And, they all taste delish as leftovers!
1. Teriyaki Bowls
Ingredients
White jasmine rice
carrots
onions
mushrooms
zucchini
ground turkey (or chicken)
2-3 eggs
Green onions
Coconut Aminos (or teriyaki type sauce of choice)
Directions
Add white rice, butter, and water to a p0t on medium high heat, once water is boiling, set on low/simmer for 15 minutes until rice is cooked.
While rice is cooking, chop carrots, onions, mushrooms, and zucchini and add to a large frying pan with some butter (or oil or tallow) at medium heat. Stir occasionally. Add some salt and pepper.
While veggies cook, in a different pan, cook your turkey - it cooks fast. Once the turkey is cooked, add it to the large frying pan with the veggies.
In the pan you cooked your turkey, throw some butter in and cook 2 scrambled eggs to add to the veggies and meat last!
Fluff your rice, use it as your base in a bowl, and top it with the veggies and meat! Cut some green onions as a garnish and drizzle your coconut aminos over top. Enjoy!
2. High Protein Lasagna
Ingredients
Lasagna noodles (I get oven ready ones)
Ground turkey
Red sauce
Cottage cheese
Mozzarella
Directions
Preheat oven to 375 degrees
Cook ground turkey on stove & mix in red sauce
Layer the lasagna dish starting with lasagna noodles on the bottom, then layer of meat sauce then cottage cheese (I just eyeball it and make a thin layer across the top), then sprinkle mozzarella cheese
Repeat another layer with lasagna noodles, meat sauce and top off with mozzarella cheese
Bake covered for 25 min then uncover and bake for another 10ish min or until cheese is melty and golden brown
3. Sweet Potato Bowl (easiest recipe)
Ingredients
Zucchini
Sweet Potato
Ground beef
Everything but the bagel seasoning
Avocado
Dressing of choice (apple vinaigrette or coconut aminos are our faves)
Directions
Preheat oven to 415 degrees. Mine takes a while so I do this first.
Cut up sweet potato and zucchini into little chunks, the size of a nickel.
Spread across the pan as evenly as possible. Drizzle with olive oil and mix around.
Bake in the oven for 12-14 minutes.
While the veggies bake in the oven, cook up some ground beef on a frying pan. I only use Salt and Pepper and a splash of Coconut Aminos to season.
Once the veggies are cooked, remove them from the oven, use them as your base, top it off with ground beef!
Sprinkle some “Everything but the Bagel” seasoning for max flavor, top with some diced avocado and dressing of choice! Enjoy!
