Hi! So I always get a bunch of questions about our meals, so I thought I would start to put all the recipes and healthy dinners in one place for you to recreate! Without having to scroll past a million ads and a ten minute story about where the recipe originated. LOL See below for ingredients and directions.

INGREDIENTS
- 2-3 Chicken Breasts – 1 inch thick at most
- 1 Egg
- 1 Cup Flour
- 2 TBS Olive Oil
- 1 1/2 Cups Parmesan Breadcrumbs
- 1 Cup Quinoa
- 1 Bunch or Bag of Broccoli
DIRECTIONS
- Preheat oven to 425 degrees. Get three cereal sized bowls and put flour in one, egg in one, and breadcrumbs in one.
- Heat up olive oil in a Fry Pan/Skillet at medium high heat. You will use this to sear the sides of the chicken breast.
- Get 1 small-medium pot for the Quinoa. Fill pot with water depending on portion size you want (exact measurements on quinoa packaging). We do 2 cups of water & 1 cup quinoa. Once boiling, add one cup of quinoa, turn down heat to simmer and cover pot. Let simmer for 15 min or until quinoa is done.
- Clean the chicken breasts, then dip them one at a time into FLOUR first, EGG second, CRUMBS third. And place on skillet. Sear both sides of chicken breast about 3-4 minutes each until breading is cooked onto the side of the chicken. It should turn golden brown.
- Once the breadcrumbs are seared onto the chicken breasts, place the breasts onto a baking sheet with light olive oil and cook for 14-16 minutes at 425 Degrees.
- While chicken is cooking, quinoa should be simmering. Then cook the broccoli on a separate fry pan/skillet using medium heat for about 10 minutes. I use salt, pepper, and a little garlic for the broccoli. You can also steam your broccoli if you prefer it a little softer ๐
- Plate chicken, quinoa and broccoli & enjoy!
