Hi friends! I’m excited to share another delish recipe with you guys! I’ve always had the biggest sweet tooth and cookies are my weakness, but I’ve been trying to find “healthier” options lol. I tried these flourless peanut butter oatmeal cookies and OMG. They are amazing, so I had to share! Let me know if you make them! Tag me!
INGREDIENTS:
3/4 Cups Rolled Oats
1/2 Teaspoon Baking Soda
1 Cup Creamy Peanut Butter
2/3 Cups Brown Sugar
1 Teaspoon Vanilla Extract
2 Eggs
Optional: 2/3 Cups Chocolate Chips
DIRECTIONS:
- Preheat Oven to 350 Degrees.
- Mix first 2 ingredients (3/4 cup rolled oats and 1/2 tsp baking soda) in a small bowl. Set aside.
- In a large bowl, beat 1 cup PB, 2 eggs, 2/3 cups brown sugar and 1 tsp vanilla extract until smooth.
- Mix all the ingredients together in a large bowl and mix with a wooden spatula!
- Optional: Add in chocolate chips!
- Roll dough into 2 inch balls and place a few inches apart. Lightly flatten the top of the cookie with your spatula (just barely flatten).
- Place cookies in oven for 10-12 minutes or until golden brown. (I prefer 9 minutes for a softer cookie)
- Remove from pan to cooling rack or storage container. Let sit for 5 minutes! Then ENJOY!
